That's more like it. Are you EQing in DAW, or is this raw?

I'm going thru the RAT into the amp, then into the DAW.. subtractive EQ > cab sim/mic sim > additive EQ > reverb

I don't think you have to go even that high on the master volume I think 5 maybe 6 tops just to get some power amp working some.
What were the Rat settings in that clip? Try those NUNO settings now with the 14K pickup, with your Rat on all the stock Rat configurations.
At least you are seeing what a 14K pickup will do compared to the 8.5. It sounds meatier than the 8.5 K for sure.

Not sure why you're EQing after amp and right before cab sim.
If you're doing pre/post dual EQ thing, you want EQ before amp (boosting mids), then after speaker (cutting mids).
So to speak (pun intended).
I would just EQ after speaker.

Nothing really changes above 6 on the master volume.

Since the audio signal doesn't go inside the DAW until after the amp, I'm not sure how else I could do that.
Is there a way to route the guitar into the audio interface and then back out to the amp, then back in again

The 8.5K A8 pickup has a touch more crunch and high end detail and clarity but it lacks the punch of the 14K. This Dean Baker Act 14K I think I had one in my Dean as well and it wasn't bad sounding pickup but it lacks some high end detail/crunch/clarity. I think I read it is designed after Dimarzio/Duncan distortion P/U, the one in my Dean was alright maybe a little generic sounding but not bad it didn't totally suck.
So you are looking to marry the two, high end detail, crunch but he punch of the 14K.
I wouldn't think you would need or want to add any mids when you are using the RAT.
