I'm not really into country (although I did run sound for a traveling country band one summer way back when with my PA) but I do recognize the killer licks and playing of certain players (Hellecasters - John Jorgensen etc).
And I don't really like the twang of pedal steel (in most, but not all... cases).
But one technique I really do dig is Waddy Wachtel's (and no, jury's out on him personally) faux pedal steel playing with his Les Paul. Either clean tone or (esp.) a little bit of dirt. Skip the people involved and just check out the technique:
